Ice cream is something everyone loves but ice cream melting quickly kills the happiness while enjoying this sweet cold dessert. However, Japan has an ice cream that doesn't melt even in the summer heat. The name of this ice cream is "Kanazawa".

Polyphenol is the binding agent in Kanazawa ice cream. This substance helps the ice cream from not melting quickly and can hold the shape of the ice cream for hours. A Biotherapy development center is behind this discovery.

They are saying that this ice cream was made completely by accident. Polyphenol, a liquid extracted from strawberries, was found to thicken ice cream during ice cream making. These ice creams are said to last up to three hours without melting.

Meanwhile, another type of ice cream that doesn't melt as quickly in the summer heat also went on sale in central Japanese cities last year. Rice flour is added at the last stage during the preparation of 'Ottegi ice cream', preventing it from melting due to heat.
