However, purchasing dried fish can be risky, as improperly dried fish may lead to food poisoning or stomach upset, particularly if moldy. This method allows you to dry any type of fish without exposure to sunlight. Here’s how to do it:
-Begin by cutting the fish into small pieces and washing them thoroughly.
-In a lidded container, arrange the fish pieces in a single layer, ensuring they do not stack on top of each other.
-Sprinkle coarse stone salt over the fish, ensuring it covers all pieces. Layer more fish on top and fill the container with salt until all the fish is adequately covered.
-Seal the jar and set it aside for one day. After this time, you’ll notice the salt has dissolved and formed a brine.
-Discard the brine and sprinkle additional salt over the fish. Seal the container again and place it in the refrigerator for six to seven days.
-Once the drying process is complete, remove the fish, wash it and it’s ready to be fried or used in curries.
