Ingredients
Nutmeg rind cut into pieces - one kilogram
Sugar - 1.25-1.5 kilograms
Cinnamon - one stick
Cloves - five
Yeast- 1/4 teaspoon
Rice or wheat - 100 grams
Boiled water - three litres
Preparation
Prepare the base: Chop the nutmeg rind into small pieces. In a large stainless steel pot, combine the chopped nutmeg, sugar, and water. Heat the mixture until it boils, then remove from heat and let it cool down.
Add flavor and yeast: Once the mixture is warm but not hot, add the cinnamon stick, cloves, and wheat. Stir in the yeast. Make sure all ingredients are well combined.
Ferment: Transfer the mixture to a clean glass vessel. Cover the opening with a clean cloth or a lid that is not airtight. Stir the mixture for 5 minutes every other day for 20 days. Use only a wooden spoon.
Strain and bottle: After 20 days, strain the mixture through a cheesecloth or muslin cloth into a clean, dry bottle.
Age: Seal the bottle and store it in a cool, dark place for at least another 20 days to mature.
